Thai Noodle salad

Ingredients :

  • 2 Vermicelli noodles
  • 4 carrots – Julienned
  • 1/2 red pepper Julienned
  • 2 green onions – chopped
  • 2 Tbsp Fresh Chopped Cilantro

The Sauce

  • Sesame seed oil
  • Fresh or jarred ginger
  • minced fresh Garlic – not garlic salt or powder,
  • 1/8th tsp peanut butter – yes real peanut butter is ok
  • 1/2 tbsp of honey
  • Soy Sauce
  • 1 tsp rice vinegar

Directions

  • Cook the noodles, about 2-3 cups of water in a pot. bring to a boil add the noodles. turn off the heat. these noodles just need to soak in the water for 10 minutes. be sure to stir.
  • In the mean time, prep the vegetable ingredients. place in a medium mixing bowl.
  • Then measure out the sauce ingredients in a small dish and whisk together.
  • Add the drained noodles to the medium mixing bowl with the vegetables and then mix in the sauce.

And Voila! This is meant to be served as a cold noodle salad!
