- 2 Vermicelli noodles
- 4 carrots – Julienned
- 1/2 red pepper Julienned
- 2 green onions – chopped
- 2 Tbsp Fresh Chopped Cilantro
The Sauce
- Sesame seed oil
- Fresh or jarred ginger
- minced fresh Garlic – not garlic salt or powder,
- 1/8th tsp peanut butter – yes real peanut butter is ok
- 1/2 tbsp of honey
- Soy Sauce
- 1 tsp rice vinegar
Directions
- Cook the noodles, about 2-3 cups of water in a pot. bring to a boil add the noodles. turn off the heat. these noodles just need to soak in the water for 10 minutes. be sure to stir.
- In the mean time, prep the vegetable ingredients. place in a medium mixing bowl.
- Then measure out the sauce ingredients in a small dish and whisk together.
- Add the drained noodles to the medium mixing bowl with the vegetables and then mix in the sauce.
And Voila! This is meant to be served as a cold noodle salad!
